This month's recipe is a delicious fresh berry combination with fresh cream.

Berries and cream

Ingredients

About 500g of mixed berries - whatever you have in your garden
Splash of sweet dessert wine
zest of one orange
half a teaspoon of sugar
500ml cream
1/4 cup castor sugar
dark chocolate

  1. Once you've picked your berries, give them a quick douse in water. Don't soak your berries as they can absorb the water - especially blueberries - and become watery and flavourless.
  2. Drain the berries well and if you have time - spread them on paper towel in one layer to dry.
  3. Combine the berries in a bowl with the wine, zest and sugar and gently mix.
  4. Whip the cream with the sugar until thickened
  5. Spoon the berries into a bowl and top with the thickened cream. Shave the dark chocolate over the top of the cream and serve.
